ご滞在中の一棟貸しやヴィラなどへ伺い、その場所のキッチンで、一組のお客さまのためだけにお料理します。

華やかな懐石料理でも、料理を習うための教室でもありません。お届けしたいのは、日本で暮らす人たちが大切な人のためにつくってきた、日常の手づくりごはん。

春の山菜、夏の瑞々しい野菜、秋のきのこや根菜、冬のあたたかな煮込み料理。そのときいちばんおいしいものを取り入れながら、季節を感じる食卓をおつくりします。

親子で集まる場へ出張し、家庭の台所だけで十品を。

ランチビュッフェのご依頼で、品川区の会場へうかがいました。業務用の設備はなく、あるのは家庭の台所だけ。そこで初夏の献立を十品仕上げ、一品ずつ名札を添えてカウンターに並べました。同じ方から、冬にも再びお声がけいただいています。

アメリカ / 日本人のご家庭への出張

日本を離れて暮らすご家族へ、いつものごはんを。

アメリカで暮らす日本人のご家庭へ、現地の台所をお借りしてうかがいました。まずは日系スーパーでの買い出しから。手に入るものを見ながら献立を組み直し、ロールキャベツや唐揚げ、きんぴらなど、普段のおかずを食卓いっぱいに並べました。

日本の味が恋しかったとのことで、たいへん喜んでいただきました。遠く離れていても、食卓に並ぶものが変わらないというのは、思っていた以上に大きなことのようでした。

A little different from the Japanese food you meet in restaurants. Rice just off the heat, and miso soup. Small dishes of the season’s vegetables. Something slow-simmered, and one warm plate made for that day alone.

In a Japanese home there is an everyday meal —
one grown out of the four seasons, the family,
and the ordinary rhythm of daily life.

Home cooking always has a face in mind — the face of the person who will eat it.

It need not be elaborate. Someone thinks of another person, moves their hands, and sets a table for them. What is there is the Japanese seasons, the texture of daily life, and a quiet kind of hospitality.

What we want to offer is not simply the experience of eating Japanese food. It is eating a meal made for you, far from home — the warmth of a table in a Japanese household.

The everyday Japanese table, met on a journey.

We come to the villa or private residence where you are staying and cook in that kitchen, for your party alone.

This is not an elaborate kaiseki course, nor a class in how to cook. What we bring is the everyday, handmade food that people living in Japan have always made for the ones they love.

Mountain vegetables in spring, the bright vegetables of summer, mushrooms and roots in autumn, slow-simmered dishes in winter. We build the table around whatever is at its best right then.

What comes of standing in home kitchens, year after year.

Omamorigohan began as a home cooking service, visiting households — families with young children, for the most part — and cooking in their own kitchens. We have since cooked in more than 500 private homes, each meal made for that particular family.

Among those clients are company executives and public figures, households that hold privacy and quality to a notably high standard. We have worked continuously in those homes — about as private a space as there is.

Not a fixed professional kitchen, but whatever pans and ingredients are at hand, and a table set for the people in front of us. That is the experience we now bring to those travelling in Japan.

Not only the eating: the presence of the person cooking, the smell of the food, the hours spent around the table. Something close to being invited into a Japanese home.

SHINAGAWA, TOKYO / LUNCH BUFFET

Ten dishes for a family gathering, from a domestic kitchen.

A lunch buffet booked for a gathering in Shinagawa. No professional equipment, only the household kitchen. Ten early-summer dishes were finished there and set out along a single counter, each with its name beside it. The same host invited us back that winter.

UNITED STATES / A JAPANESE FAMILY ABROAD

Everyday Japanese food, for a family living far from it.

We travelled to a Japanese household in the United States and cooked in their kitchen. It began with the shopping, at a Japanese grocery there. The menu was rebuilt around what could be found, and the table filled with ordinary dishes: cabbage rolls, karaage, kinpira.

They had been missing the taste of home. That, in the end, was what mattered most.
